AN ENCOUNTER WITH MEXICO IN THE FAR NORTH, BISMARCK, NORTH DAKOTA, USA
Bismarck, North Dakota is possibly the northernmost city of any size, furthest away from the USA border with Mexico, way south.


An early snowstorm, in the first days of October had closed the airport at Rapid City; I was scheduled to fly out of Rapid City, South Dakota. Rapid consultation with Lakota Indians, it is they who drive me to and fro the airport to the reservation in Eagle Butte, South Dakota, decided to reroute my flight from Bismarck, North Dakota, which was yet to be touched by the snow.
ND is a large, barely populated state of the USA, butting into Manitoba in Canada to the North. It has no spectacular scenery to speak of, even though the rolling hills on the way from the Lakota were pleasant enough.
This is a staunchly conservative state, until recently almost all the inhabitants (the new ones) were of German or Scandinavian stock. Indians have lived here from time immemorial. As we rolled into Bismarck, a newly found sense of prosperity was in the air in this farmland state, Yes, Oil! Natural Gas! This has spurred a migration of young people from other states, causing a change in the human scenery.
I stayed at a hotel, old and worn out but comfortable enough. From my window I could survey Americana: McDo, Wendy’s, Pizza Hut, Perkins, Cracker Barrel, Taco Johns, amidst an architecture so bland that it would be a mistake to call it an architecture.
I went down to the fitness room, a small room fitted with two treadmills and a large TV. I had plugged in my iPod and was listening to some soothing music from Cabo Verde when two men came in and one of them blurted out, Howyadoin?
“Do you mind if I play this music”, I asked.
No, said the younger of the two with both his arms fully tattooed, it will help us to relax.
I am from LA VEGA, said the older one of the two and by his accent, I could detect, a further distant connection to his genealogy.

No, I am from Sinaloa in Mexico.
You of course know who is Chapo Guzman, he giggled.
Chap was the most brutal of the drug lords; I think he is hiding out somewhere, hailed as a genius by American Anti Drug Forces.
I switched immediately to Spanish, much to his surprise.
We talked a lot about the loss of innocence of Mexico, imposed on the good people of Mexico by a small band of narcotraficantes.
They had come to North Dakota to work in construction as work in Las Vegas had dried up. After three months, they would return to their families, before the snow arrives in these parts. They introduced themselves but preferred their nicknames. Cuco, the 42 year old said, he is called Chulo, “because he is all tattooed up”
I am now clean, man. Said Chulo.
They talked about their families and their loneliness here; they stay in the hotel for three months, and the lack of good Mexican food.
“When I came here fist about five years ago, there were may be five Mexicans here, but now there are more than a thousand.” exclaimed Cuco.
All three of us agreed that the food was better south of the border. Also, most of the Mexican food sold in the USA is Tex-Mex, rather than authentic Mexican. We talked about the grand variety of cuisine in Mexico, from Vera Cruz to Jalisco to Sinaloa.
When you come to La Vega, Cuco continued, and you see me on the street, I expect you to shout and ask, Hey Cuco How are you?
They wanted to know about myself, details that I kept to a minimum except that I had come to visit the Indians. I let them tell me about their life.
Is it true, Chulo asked, that a glass of beer in the morning purify your blood? I diplomatically answered that Beer has a lot of empty calories, may not be good for the body.
If you eat the fast food here and drink beer every day, it wont be long before you would get diabetes, I told them.
Then they had lots of questions about Diabetes, signs and symptoms, were very relieved that they didn't appear to have diabetes and that with exercise every evening after a days hard work would keep Diabetes at bay.
We had talked about many things. Two construction labourers, far away from home, proud of their native language, mocking the way Portenos and Puerto Ricans spoke Spanish!
When it was time for me to leave, they each shook hands, with warm smiles, said: Don't forget us, if you see us again, please call our names. We will do the same.

This country is made up of immigrants just like them, going where the job is, working hard and saving money for the family. It is the origin of American friendliness I am sure.

And for me, the diversity of this country is illustrated by the fact that I could speak Spanish in this city at a place close to the Canadian border and far away from the Mexican Border.

The rats fed high cholesterol diet without Camel Milk developed features similar to those of non-alcoholic steatohepatitis (NASH), characterized by hepatic steatosis; inflammatory cellular infiltration in liver tissue; altered liver functions; and increased total cholesterol, triglycerides, low-density lipoprotein cholesterol, very-low-density lipoprotein cholesterol, atherogenic index (AI), blood glucose, insulin resistance (IR), and malondialdehyde (MDA) levels. Additionally, feeding this diet to animals decreased catalase (CAT) activity and the glutathione (GSH) and high-density lipoprotein (HDL) cholesterol levels. Camel milk intake for eight weeks decreased hepatic fat accumulation and inflammatory cellular infiltration, preserved liver function, increased the GSH levels and CAT activity, decreased the MDA levels, and ameliorated the changes in the lipid profile, AI, and IR in animals from the High Cholesterol plus Camel Milk Group.

Camel Milk has a unique composition that is rich in minerals; vitamins, insulin and insulin-like protein, and it increased HDL-cholesterol and ameliorated the biochemical and cellular features of NAFLD in rats that received a High Cholesterol diet. The antioxidant effect of CM is a likely mechanism for the altered metabolism and absorption of High Cholesterol diet in the presence of Camel Milk. Regular consumption of Camel Milk could provide a natural way to protect against NAFLD induced by a high-fat diet.
I wrote to the lead author who was kind enough to reply immediately.
“Although the number of large population studies about the effects of Camel Milk in Diabetes are still limited, Agarwal et al (2007) reported zero prevalence of Diabetes Mellitus among the Rica Community in India. These are camel breeders who depend markedly on camel milk on their diet”. The kind doctor provided further articles on the efficacy of camel milk, some under clinical settings.

Why did this article seem so important? NAFLD or fatty liver has drawn some attention in the west as well as in Asia.
In a study from Malaysia, 68% of Indians, 65 % of Malay (both Men) and 5.2% Chinese women were found to have Fatty Liver.
In the USA, it is estimated that one in five adults have fatty liver and that Mexicans living in America as well as Obese people have higher than normal rate of Fatty Liver.
What causes Fatty Liver? As proven in the experiment above, you can induce Fatty Liver by a High Cholesterol Diet.

The Western pattern diet, also called Western dietary pattern or the meat-sweet diet, is a dietary habit chosen by many people in some developed countries, and increasingly in developing countries. It is characterized by high intakes of red meat, sugary desserts, high-fat foods, and refined grains. It also typically contains high-fat dairy productshigh sugar drinks and higher intakes of processed meat.

During my repeated visits to Malaysia and during participatory observation, there is no doubt that the local Chinese ate better quality food than the Indians or the Malays, which may be reflected in their fatty liver rates.

NAFLD was strongly associated with Diabetes Mellitus, Impaired Glucose Tolerance, BMI greater than 23, Decreased HDL, Increased Triglycerides and Hypertension. This association has been proven over and over again from various epidemiological studies including the recent one from NHANES (epidemiological) study in the USA.

This also ties in nicely with the thought that Fatty Liver comes before Diabetes and that Diabetes Mellitus Type 2 which is now spreading like fire may be due an organ failure at the level of LIVER rather than pancreas or Muscles as it is conventionally thought.
So an article from those indefatigable researchers at Helsinki in the October 2013 issue of Diabetologia was a revelation indeed. It made such an impact in the media that all TV channels and major newspapers picked it up. Even the drug company supported “Medical Journals” which are sent free to doctors were full of enthusiasm about this news, licking their chops at the dream of manufacturing some highly priced anti-inflammatory medications

They are a mystery to researchers: people who are significantly overweight and yet show none of the usual metabolic red flags. Despite their obesity, they have normal cholesterol levels, healthy blood pressure levels and no apparent signs of impending diabetes.
Researchers call them the metabolically healthy obese, and by some estimates they represent as many as a third of all obese adults. Scientists have known very little about them, but new research may shed some light on the cause of their unusual metabolic profile.
A study in the journal Diabetologia has found that compared with their healthier counterparts, people who are obese but metabolically unhealthy have impaired mitochondria, the cellular powerhouses that harvest energy from food, as well as a reduced ability to generate new fat cells.
Unlike fat tissue in healthy obese people, which generates new cells to help store fat as it accumulates, the fat cells of the unhealthy obese swell to their breaking point, straining the cellular machinery and ultimately dying off.
This is accompanied by inflammation, and it leads to ectopic fat accumulation — the shuttling of fat into organs where it does not belong, like the liver, heart and skeletal muscle. A fatty liver frequently coincides with metabolic abnormalities, and studies suggest that it may be one of the causes of insulin resistance, the fundamental defect in Type 2 diabetes.
In the healthy obese, however, the fat tends to remain in the subcutaneous padding just beneath the skin, where it appears to be fairly innocuous.
“The group that doesn’t gain fat in the liver as they get obese seems to avoid inflammation and maintain their metabolic health,” said Dr. Jussi Naukkarinen, a research scientist specializing in internal medicine at the University of Helsinki. “There is a complete difference in how they react to obesity.
So, kudos to our desert brethren who continue to drink Camel Milk and pity those who flock to the McDo and other Disease Mongers now lining the air conditioned malls of the Middle East and the Gulf (Almost all countries in the Gulf region can be included in the Fattest on the Earth List)

Everything will now come down to Inflammation in the body and the modern diseases being a manifestation of it.
And the mind body connection will be further investigated by the news that a combination of Serotonin and Epinephrine activation increases fat burning, helping the organism to loose weight. It would tie in with Autonomic nervous system, and then with the Eastern Philosophy… the possibilities are endless.

SEATTLE A Foodie Paradise

SEATTLE, A FOODIE PARADISE
Outside of New York City, in the USA, the major cities have regional emphasis on their cuisine, with a smattering of innovative cuisine. If you go to Miami, there are hundreds of Cuban Restaurants, almost all of them serving similar food, an occasional Colombian, Peruvian, Brasilian resto thrown in. Caribbean islands which have many thousands of its citizens here, barely makes a mark on the dining scene. There are scarce representations by the usual culprits: Italian, mainly, a couple of French and that is about it. No decent Japanese or Vietnamese Resto, and usually you have to drive far to find anything decent other than a Cuban resto.
Or take San Antonio, oodles of Mexican cuisine but none serving a good noodle soup. An occasional good eat along the River Walk (Biga).
This story is repeated in all major cities. SFO is Asian dominated; forget about medium sized cities such as St. Louis, Omaha etc. Mostly food deserts with great pretensions.vietnamese restaurants in Omaha serves food lower in quality than the food vendors of the markets in Hanoi!





You can imagine my surprise when I began looking for food in Seattle-outside the Chinatown with its array of Asian Restaurants. (Chinese). The number of wine tasting places with titbits served reflects the elegance of the palates of the natives. It is the first time that I have seen a Viet Resto in the USA that specializes in the regional cuisine of Vietnam, over and above the usual Pho and Bun Ga Xao. Fusion cuisine thrives here- Izikaya mixed with American Imagination. TanakaSan goes beyond the Japanese, Japanese American with finer textures and tastes.
The ethnic mix of the city adds yet another flavour. There are lots of Somali immigrants but their cuisine is not yet prominent in the local gastronomy scene. The “usual” North Indian restaurants usually owned by Bangladeshis, as they are universally are present, I did not detect any South Indian Restos.
What puts Seattle on the food map so prominently is the Fusion Cuisine or shall we say Nouveau American Cuisine. After all the food  of the city should reflect the character of the city which produced Starbucks, Microsoft and Boeing! And the city that has the oldest Japanese restaurant in America. People here are a mix of Chinese, Japanese, Mexican and other American, European and Africans and some other Asians. When I visit Seattle or Vancouver I get the vision of the world of the future-people from al over the world living in more or less easy harmony. Sharing the same public culture while maintaining many private cultures, without imposing any belief or religion or rituals on each other.
So I will add Seattle to my modest list of Foodie Destinations
Kuala Lumpur in Asia
Buenos Aires in the Americas
Melbourne in Australia
France in general in Europe
London has recently become a Foodie Paradise in the absence of an aesthetic local cuisine
Foodie Paradise is not the same as Food Paradise. One eats well in Thailand, Vietnam, Indonesia; they are indeed Food paradises but not Foodie paradises.
Even though I have enjoyed eating well in Cape Town, South Africa, I don't know enough about it to add to my modest list, even though I am certain it is the best place to eat in Africa.

There is one Foodie Paradise that is very seldom mentioned because it does not belong geographically anywhere and it could be anywhere. The First and Business Class Sections of Long Haul International Flights.
My most recent, such a meal was aboard TAP from Miami to Lisboa.
